“Scottie” Biscotti

Here’s our current favorite “cookie” recipe for people! This is a Mandel Bread recipe, Yiddish for almond bread and similar to Biscotti, from Molly Yeh. Instead of the sliced shapes we made Scottie dog shape cookies using a vintage cookie cutter. Trace the outline around the dog shape and cut out a thicker, about 1/2 inch thick cookie and bake slightly longer than the bread that gets baked twice for a nice golden color. Delicious! Scottie Biscotti! We like the combination of almond paste or marzipan, chopped almonds and cacao nibs.
